  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

  • 1 red bell pepper, cored, seeded and thinly sliced
  • 1 teaspoon minced garlic
  • 2 teaspoons minced ginger
  • 2/3 cup chicken broth
  • 2 tablespoons sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 1/2 cups fresh mango chunks

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the chicken pieces in a single layer, season with salt and pepper, and brown for 4–6 minutes until cooked through. Cook in batches if necessary so the chicken sears rather than steams.
  3. Remove the cooked chicken and add the sliced bell peppers to the pan. Cook 3–4 minutes until just softened.
  4. Add the garlic and ginger to the peppers and cook for about 1 minute until fragrant.
  5. In a small bowl, whisk together chicken broth, sugar, soy sauce, rice vinegar and cornstarch until smooth.
  6. Return the chicken to the pan and pour the broth mixture over the chicken and vegetables. Bring to a simmer and cook 1–2 minutes until the sauce thickens slightly.
  7. Stir in the fresh mango chunks just to warm them through, then remove from heat and serve immediately over rice or noodles.
