Homemade Chili Cheese Dip — no processed cheese or canned chili, just simple, slow-cooked goodness.

After many attempts to make a smooth, creamy chili cheese dip without processed cheese, I discovered the trick: cream cheese. It brings a velvety texture that keeps the dip from separating or turning grainy, while letting real cheddar shine through. This version comes together easily in a slow cooker, which makes it ideal for parties, game day, or any casual gathering where you want a warm, crowd-pleasing appetizer without stressing over the stove.
To keep things simple I brown the meat and onion first, then combine everything in the crock pot to finish. The short warm, gentle cooking time lets flavors meld and gives the cheese a perfect, dip-ready consistency. This recipe yields about twelve 1/2-cup servings, making it great for a small party or a family get-together.
The recipe is very flexible. Use lean ground beef, pork sausage, or chorizo depending on the flavor profile you want. Ground beef and sausage give classic results, while chorizo adds a smoky, spicy note if you prefer more heat. For a kid-friendly, mild dip use mild salsa and chili beans in mild sauce. To up the heat, choose hot chili beans and a spicy salsa, or stir in a pinch of cayenne or crushed red pepper.
I recommend shredding your own cheddar rather than using pre-shredded cheese. Store-bought shredded cheese is often coated with anti-caking agents and preservatives, which can make the finished dip grainy. Freshly grated cheddar mixes more smoothly with the cream cheese and produces a better texture.
Serve the dip with tortilla chips, sturdy vegetable sticks, or toasted bread slices. Top it with extra shredded cheddar, chopped green onions, fresh cilantro, or a spoonful of sour cream for contrast. The dip also works well as a warm topping for baked potatoes or nachos.
Homemade Chili Cheese Dip

Ingredients
- 1 pound lean ground beef, pork sausage, or chorizo (choose one)
- 1 small onion, finely chopped
- 3 tablespoons all-purpose flour
- 1 (15 oz) can chili beans in chili sauce
- 1 1/2 cups salsa of choice
- 1 cup chicken broth
- 1 (4 oz) can chopped green chilies
- 2 teaspoons garlic powder
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 2 1/2 cups shredded sharp cheddar (preferably freshly grated)
- 4 oz cream cheese, cubed and softened
Instructions
- In a large skillet, brown the meat with the chopped onion over medium heat until no longer pink. Drain any excess fat.
- Sprinkle the flour over the cooked meat and onion and stir well to combine. The flour helps thicken the dip as it cooks.
- Transfer the meat mixture to the slow cooker. Add the chili beans, salsa, chicken broth, chopped green chilies, garlic powder, chili powder, and cumin. Stir to combine.
- Add the cubed cream cheese and the shredded cheddar to the slow cooker, stirring to distribute the cheese evenly.
- Cover and cook on LOW for 2–3 hours, stirring occasionally, until the cheese is melted and the dip is smooth and hot throughout.
- When the cooking time is complete, switch the slow cooker to the warm setting to keep the dip at serving temperature. Stir before serving and top with extra shredded cheese or fresh garnishes if desired.
Notes
For the best texture, grate your own cheddar. Pre-shredded cheese often contains anti-caking agents that can make a melted dip appear grainy. If you want more heat, use chili beans in hot chili sauce, choose a spicy salsa, or add a dash of cayenne pepper or crushed red pepper flakes. This dip stores well refrigerated for a few days and can be gently reheated in a slow cooker or on the stovetop with a splash of broth to loosen consistency.
Pair the dip with sturdy dippers like tortilla chips, pita chips, toasted baguette slices, or raw vegetables. It also makes a hearty topping for nachos or baked potatoes.
