Ingredients

  • 2 cups full-fat Greek yogurt or other thick yogurt
  • 4–6 wedges of leftover roasted Kabocha squash (or other roasted squash)
  • 1/2 an avocado
  • 1/4 cup roasted salted pistachios
  • 2 Tablespoons hemp seeds (hemp hearts)
  • 2 Tablespoons pumpkin seeds (pepitas)
  • A small handful of cilantro, roughly chopped
  • 1 scallion, thinly sliced
  • Olive oil and honey, for drizzling
  • A pinch of salt, plus pepper and chili flakes for topping

Instructions

  1. If desired, warm the leftover roasted squash slightly: microwave 20–30 seconds or heat in a small skillet over medium-low for about 5 minutes. The squash is also delicious cold.
  2. Divide the yogurt into two large bowls. Top each bowl with half the squash, sliced avocado, pistachios, pumpkin seeds, hemp seeds, cilantro, and scallion.
  3. Drizzle each bowl with about 1 teaspoon olive oil and 1/2 teaspoon honey, or to taste. Finish with pinches of salt, freshly cracked pepper, and chili flakes. Serve immediately.
  4. To pack for lunch, assemble the bowls without the nuts and seeds; keep those in a separate container and add them just before eating to preserve crunch.

Notes

*Use any leftover roasted squash—Kabocha, butternut, acorn, delicata—or other roasted vegetables like sweet potatoes, beets, or carrots. Adjust nuts, seeds, and herbs to match what you have on hand. Savory granola or toasted hazelnuts and sunflower seeds are excellent alternatives for crunch.
