- Unroll the cinnamon rolls on a clean surface. Starting from the center and keeping the cinnamon side inward, roll the strips together into one large spiral, joining the ends so they form a rough circle. It’s okay if the dough doesn’t touch the pan edges perfectly; the goal is a single, large spiral that fits into the pan.
- In a medium bowl, beat the softened cream cheese with the sour cream and brown sugar until smooth. Scrape down the sides of the bowl, then add the lemon zest, lemon juice, vanilla, and a pinch of salt. Beat again until everything is fully combined and creamy.
