I’m always a fan of a one-bowl meal: it should have a saucy element, something crisp for contrast, and a fresh garnish to lift the richness. This sticky gochujang beef bowl delivers all of that without a lot of effort.

The sauce is the hero here — gochujang paste provides heat, umami and color, while sweet chili jam adds sweet-tart balance. A touch of soy, sesame oil and fish sauce rounds everything out and gives the ground beef a glossy, almost caramelized finish. The quick-pickled carrot ribbons add crunch and brightness so the bowl never feels heavy.

A few helpful ingredient notes

  1. Gochujang is a fermented Korean chili paste with heat and umami. The recipe balances the spice, but if you want a milder dish, use ½ tablespoon of gochujang instead of a full tablespoon.

Sticky Gochujang Beef Bowls

These sticky gochujang beef bowls are packed with flavor but low on effort. Ground beef cooks quickly and becomes glossy and slightly caramelized when coated in gochujang and sweet chili, then is served over steamed rice with quick-pickled carrots, scallions, cilantro and sesame seeds for contrast.

Ingredients

For the steamed rice
  • 1 cup long-grain white rice
  • 1 ½ cups water
For the quick pickled carrots
  • 2 carrots
  • 1 tablespoon rice vinegar
  • Pinch of salt
For the sticky gochujang beef
  • ½ tablespoon neutral oil
  • 1 lb (500 g) ground beef
  • 3 scallions, sliced (separate white and green parts)
  • 3 garlic cloves, crushed
  • 1-inch piece ginger, grated (or 2 teaspoons ginger paste)
  • 1 tablespoon gochujang paste (reduce to ½ tbsp to lower heat)
  • 2 tablespoons sweet chili jam (or sweet chili sauce, or honey)
  • 1 tablespoon light soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon fish sauce
  • Sesame seeds, to serve
  • Cilantro leaves, to serve

Method

  1. Cook the rice.
    Place the rice in a pot with a lid and add 1 ½ cups cold water. Bring to a simmer over medium-high heat. Once you see small foamy bubbles, turn the heat to low and cover. Cook for 12 minutes, then remove from heat and keep covered to steam for another 10 minutes.
  2. Make the quick-pickled carrots.
    Peel the carrots and use a vegetable peeler to shave them into long ribbons. Place the ribbons in a bowl, add the rice vinegar and a pinch of salt, toss to combine and set aside to pickle briefly while you cook the beef.
  3. Brown the ground beef.
    Heat the oil in a large frying pan over medium-high heat. Add the ground beef and break it up with a spatula. Cook for about 5 minutes until nicely browned and most of the moisture has evaporated.
  4. Add the aromatics.
    Stir in the white parts of the scallions, crushed garlic and grated ginger. Cook for 1–2 minutes until fragrant.
  5. Add the sauce.
    With the beef fully cooked, add the gochujang, soy sauce, sweet chili jam, fish sauce and sesame oil. Toss everything together and let the mixture cook briefly until glossy, sticky and slightly caramelized.
  6. Garnish and serve.
    Divide the steamed rice among bowls. Spoon the sticky gochujang beef over the rice, add the pickled carrot ribbons, scatter the green parts of the scallions, cilantro and sesame seeds, and finish with a squeeze of lime if desired.
