Ingredients

  • 1 pound 96/4 extra lean ground beef
  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 1 yellow or orange bell pepper, diced
  • 5 cups shredded collard greens
  • 1 cup beef broth
  • 1 pint grape or cherry tomatoes, halved
  • 15 oz can black beans
  • 18 oz tomato sauce with roasted garlic
  • 3 tablespoons homemade taco seasoning
  • 10 corn tortillas (extra thin preferred)
  • 6 oz sharp cheddar cheese, shredded

Instructions

  1. Brown the ground beef in a skillet over medium-high heat until fully cooked. Drain any excess grease.
  2. Add the diced onion and bell peppers to the skillet and sauté for 2–3 minutes until they begin to soften.
  3. Stir in the shredded collard greens and mix well so the greens start to wilt into the beef and vegetables.
  4. Pour in the beef broth, cover the skillet, and simmer for about 5 minutes or until the greens are wilted and tender.
  5. Remove the cover and continue to simmer until the broth has mostly reduced.
  6. Take the skillet off the heat and stir in the halved tomatoes, black beans, tomato sauce and taco seasoning until evenly combined.
  7. Stack half of the corn tortillas, cut them into thin strips and then into bite-sized pieces. Stir the tortilla pieces into the beef and vegetable mixture so they absorb some of the sauce.
  8. Spray the slow cooker with non-stick spray, add the casserole mixture, and spread it evenly.
  9. Top the mixture with the shredded cheese.
  10. Cover and cook on high for 3–4 hours or on low for 6–8 hours, until the vegetables and beans are fully cooked and tender.
