I’m a big fan of no-bake desserts. They’re quick, comforting, and perfect when you want something impressive without turning on the oven. Jell‑O pudding pies are a classic starting point for ideas like this one, but after making a rich crock-pot caramel, the pie evolved into a layered cheesecake instead of a pudding pie.
The crock-pot caramel is thick, creamy, and sliceable when chilled — it’s much less runny than many store-bought caramels and makes an ideal filling between the cheesecake and the chocolate layers. It also works beautifully as a cupcake filling or a dip for fruit.

Ingredients
- 9 oz store-bought graham cracker crust or a deep-dish homemade crust
- 12 oz softened cream cheese
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- ½ cup creamy peanut butter
- 1 cup crock-pot caramel, room temperature
- 8 oz Cool Whip topping
- 7.2 oz bottle Hershey’s Milk Chocolate Magic Shell
- 2–3 tablespoons Planters salted caramel peanuts, roughly chopped
Directions
- In the bowl of a stand mixer or in a medium bowl with a hand mixer, beat the softened cream cheese and vanilla extract until smooth and fluffy.
- Add the powdered sugar and beat for about 2–3 minutes, scraping the bowl once or twice so everything is fully incorporated.
- Add the peanut butter and mix until the filling is uniform and creamy.
- Spread the cheesecake mixture evenly into the graham cracker crust. Cover and chill for at least one hour to firm up.
- Once the cheesecake layer is set, spread the room-temperature caramel evenly over the top. Return the pie to the refrigerator and chill for another hour so the caramel firms.
- Pour most of the Magic Shell over the caramel layer, reserving a small amount to drizzle later. Return the pie to the refrigerator for about 15 minutes so the chocolate sets into a thin, crisp layer.
- Spread the Cool Whip over the chilled pie to create a smooth, fluffy top layer.
- Drizzle the reserved chocolate over the Cool Whip and sprinkle with the chopped salted caramel peanuts.
- Slice and serve. The recipe makes about 8 generous servings.
