For the salad:

  • 8 cups baby spinach
  • 3 kiwis, peeled and sliced
  • 2 cups assorted fresh berries (strawberries, blueberries, raspberries)
  • 1/2 cup crumbled goat cheese

Instructions

  1. Make the candied pecans: Line a small baking sheet with foil and coat lightly with cooking spray. In a small skillet, combine pecans, sugar and butter over low heat. Stir constantly until the sugar melts and the pecans are coated in a syrupy caramel. Spread the hot pecans on the prepared foil in a single layer and allow them to cool completely. Once set, break into pieces.
  2. Make the dressing: Combine olive oil, red wine vinegar, honey, Dijon mustard, poppy seeds and kosher salt in a jar with a tight-fitting lid. Shake vigorously until well combined. Taste and adjust sweetness or acidity to your preference. Set aside.
  3. Prepare the spinach: Place baby spinach in a large serving bowl. Tear larger leaves into smaller, fork-friendly pieces.
  4. Dress the greens: Toss the spinach with enough dressing to coat the leaves lightly. This light coating adds flavor without wilting the leaves.
  5. Add the fruit: Scatter the sliced strawberries, blueberries, raspberries and kiwi over the dressed spinach. Drizzle a little more dressing over the fruit layers—no heavy tossing needed.
