Homemade Coconut Delight Dessert Recipe

This Coconut Delight is one of my favorite no-bake desserts — it turns out perfectly every time. Layers of creamy coconut filling sit on a buttery graham cracker crust, finished with a cloud of whipped topping and toasted coconut. It’s easy to prepare, light in texture, and ideal for warm-weather gatherings or any time you want a simple, impressive dessert.

Graham cracker crusted dessert, topped with cool whip and toasted coconut on a white plate.

The recipe begins with a crunchy crust made from graham crackers and butter, followed by a no-bake cheesecake-like filling flavored with coconut. The top is finished with Cool Whip (or whipped cream) and a generous sprinkle of toasted coconut for color and crunch. If you enjoy tropical flavors, this dessert delivers coconut in every bite without using the oven.

Ingredients You Will Need

Ingredients needed to make coconut delight measured in small bowls.
  • 12 graham crackers — about 1 1/2 cups when crushed
  • 1/2 cup unsalted butter, melted (or salted butter plus a pinch of salt)
  • 1 tablespoon granulated sugar for the crust
  • 8 ounces cream cheese, softened to room temperature
  • 1/4 cup powdered sugar
  • 3.4 ounce box vanilla instant pudding mix
  • 2 teaspoons coconut extract, divided
  • 2 cups heavy whipping cream, cold
  • 1 tub (approx.) Cool Whip or additional whipped topping
  • 2 cups shredded sweetened coconut flakes, divided (toast some for garnish)

Variations

  • Flavor twist: Substitute pistachio pudding and a touch of almond extract for a nutty, green-hued version.
  • Chocolate drizzle: Finish with a thin drizzle of melted chocolate for contrast.
  • Nut topping: Replace the toasted coconut garnish with chopped pecans or pistachios for crunch.

How to Make Coconut Delight

  1. Prepare the pan: Line an 8×8 baking dish with parchment paper, leaving a couple of inches of overhang on two sides to act as a sling for easy removal. Set aside.
  2. Make the crust: Pulse the graham crackers in a food processor into fine crumbs (or place them in a sealed plastic bag and crush with a rolling pin). In a bowl, combine the crumbs with the melted butter and 1 tablespoon granulated sugar, mixing until the texture resembles wet sand.
  3. Graham crackers crushed in a food processor.
  4. Press the crust: Transfer the crust mixture to the prepared pan and press firmly and evenly into the bottom to form a compact base.
  5. Graham crack crust crushed and mixed with melted butter pressed into baking dish.
  6. Make the filling: In a mixing bowl, beat the softened cream cheese and powdered sugar on medium speed for about 3 minutes until light and fluffy. Add the cold heavy cream, vanilla pudding mix, and 1 teaspoon of the coconut extract. Beat on medium-low until smooth and fully combined (about 30 seconds to 1 minute).
  7. Cream cheese cheesecake mixture spread over graham cracker crust.
  8. Assemble: Spread the cream cheese filling over the crust in an even layer. Top with an even layer of Cool Whip or whipped cream and smooth the surface.
  9. Chill: Refrigerate for at least 1–2 hours, or preferably overnight, until fully set for easier slicing and best texture.

  11. Toast the coconut: While the dessert chills, toast the remaining coconut in a dry skillet over medium heat. Stir constantly and watch closely — coconut can go from golden to burnt very quickly. Once golden, remove from heat and allow to cool.
  12. Finish and serve: Just before serving, sprinkle the top with the toasted coconut. Use the parchment overhang to lift the dessert from the pan and cut into 9 equal portions.

Tips

  • Butter choice: Use salted butter for the crust or add a pinch of salt if using unsalted butter to enhance flavor.
  • Chill time: Chilling overnight yields the best texture and makes slicing cleaner.
  • Watch the coconut: Toasting goes quickly — stir constantly and remove at the first golden color.
  • Clean cuts: Warm a sharp knife under hot water, dry it, and slice between cuts for neat slices.

FAQs

How do I store Coconut Delight?

Store any leftovers in the refrigerator for up to 3 days in an airtight container or covered securely with plastic wrap.

Can I make this ahead and freeze it?

Freezing is not recommended for the fully assembled dessert because the whipped layer doesn’t thaw well. You can freeze the crust or the unwhipped filling separately if needed.

Can I use a round pan instead of an 8×8?

Yes. A 9-inch pie dish works nicely if you prefer a pie-style presentation.

Equipment

  • Food processor (or a large Ziploc bag and rolling pin)
  • 8×8 baking dish (or 9-inch pie dish)
  • Large mixing bowl and mixer

Notes

If you don’t have a food processor, place the graham crackers in a sturdy plastic bag and crush them with a rolling pin or meat mallet. You can use sweetened or unsweetened coconut for topping — sweetened coconut will toast darker because of the coating.
