Crispy Braised Apricot Chicken

Ingredients

  • 8 chicken thighs (skin on)
  • 1 tablespoon olive oil
  • 1 cup apricot jam
  • 1 tablespoon Dijon mustard
  • 1 (10 fluid ounce) can chicken broth
  • Juice from 1 lemon
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat the olive oil in a skillet over medium-high heat. Once hot, add the chicken thighs skin-side down and cook for 8–10 minutes, until the skin is well browned and releases from the pan. If they stick, give them a bit more time. Flip and cook the other side for 3–4 minutes.
  3. Transfer the browned chicken to a plate and set aside.
  4. In the same skillet, add the apricot jam, Dijon mustard, chicken broth, lemon juice, onion powder, garlic powder, smoked paprika, and salt and pepper. Increase the heat to high and bring the mixture to a gentle boil, stirring until the ingredients are combined and the sauce begins to thicken slightly.
  5. Return the chicken to the skillet, arranging each piece skin-side up so the skin stays exposed. Place the skillet uncovered in the preheated oven and braise for about 45 minutes, or until the chicken is cooked through and very tender.
  6. Remove from the oven and serve immediately, spooning the apricot sauce over the chicken. This is especially delicious with garlic mashed potatoes or crusty bread to soak up the sauce.
