If you read my post from last Saturday — Tim Tam Truffles — you’ll know I was having a minor panic because local supermarkets were out of Oreos. That little crisis hasn’t been resolved yet: there are still no Oreos anywhere nearby. It’s a bit ridiculous, especially when you’re a baking-obsessed, food-loving blogger who likes to experiment in the kitchen.
Okay, I admit I’m being a little dramatic. They’re just a biscuit and I don’t actually need them for today’s recipe. Still… Oreos. Sigh.

Today’s recipe contains neither Oreos nor chocolate — surprising, I know — because this is a caramel-focused bake. I call them Chewy Caramel Oat Bars: a sticky, gooey, chewy oat slice that delivers a bold caramel flavour in every bite.

The idea for these bars came when I was making salted caramel for a different recipe. I simmered butter, brown sugar and milk until it became a glossy caramel, and I started wondering: what if that caramel were the only wet ingredient in an oat bar? The caramel already supplies butter and sugar, so the rest is just oats, flour, a little raising agent and possibly an egg.
My first experiment included an egg and quite a lot of wholemeal flour. The texture was too dry and the caramel didn’t sing as strongly as I wanted. So I tried a second version without the egg, reduced the flour to make a thinner batter, and relied on baking soda for lift. The bars rose beautifully in the oven, then deflated as they cooled — which might look alarming, but the taste test is what really matters.
I’m so glad I waited. The deflated bars were exactly what I hoped for: sticky, chewy, sweet and intensely caramel-flavoured. They have the delicate chew of a soft toffee combined with the satisfying texture of oats. If you prefer thicker slices you can double the recipe and bake in the same 8″x8″ pan for a more substantial bar.

These bars are incredibly simple to make. The method is straightforward: bring butter, brown sugar and milk to a rolling boil and simmer until caramelised, let it cool briefly, then stir into the dry mix of oats, wholemeal flour and baking soda. Press the mixture into a lined 8″x8″ tin and bake until set. When they come out they’ll be puffed, then sink as they cool — that’s normal and what gives them their chewy, dense texture.
Chewy Caramel Oat Bars
Ingredients
- 80 g Butter
- ¾ cup Brown Sugar
- 5 tbsp Milk
- ¾ cup Oats
- ½ cup Wholemeal Flour
- 1 tsp Baking Soda
Instructions
- Preheat the oven to 180°C (350°F) and line an 8″x8″ (20x20cm) pan with baking paper.
- Place the butter, brown sugar and milk in a saucepan over medium–high heat. Bring to the boil and let it simmer for about 5 minutes until glossy and slightly thickened.
- Remove the caramel from the heat and allow it to cool for 10 minutes so it’s warm but not scalding.
- While the caramel cools, combine the oats, wholemeal flour and baking soda in a bowl and mix thoroughly.
- Pour the cooled caramel into the dry ingredients and stir until evenly combined.
- Transfer the mixture into the prepared pan and smooth the top. Bake for 25–30 minutes, or until a skewer inserted into the centre comes out mostly clean.
- The bars will puff up in the oven and then sink as they cool — that’s expected and creates the chewy texture.
Notes
If you’d like a thicker slice, double the recipe while keeping the same 8″x8″ pan. For a firmer bar, bake a few minutes longer, but keep an eye on them so they don’t overbrown.
