  • 3 Tablespoons olive oil, divided

  • ½ teaspoon dried thyme
  • 1 cup Hearty Burgundy wine

Instructions

  1. Rub both sides of the beef filets with 1 tablespoon olive oil and season well with salt and pepper. Set aside to come to room temperature while you prepare the sauce.

  6. Transfer the mushroom sauce to a warm serving dish and keep warm while you cook the steaks.
  7. The skillet will still be hot from the sauce—add the remaining 1 Tablespoon of olive oil if needed. For medium-rare steaks, place the filets in the hot pan and cook without moving them for about 3–4 minutes per side. Increase the cook time by 1–2 minutes per side for medium-well to well-done.
