What is Capricciosa?
The name capricciosa comes from the Italian word for “capricious,” which is fitting because the topping mix can change slightly from one pizzeria to another. The essentials are tomato sauce, fresh mozzarella, ham (or prosciutto cotto), and artichokes. Common additions include black olives, anchovies, or a baked egg, but the core idea is quality ingredients assembled simply. Using the freshest produce and good-quality cured meats and cheese makes a huge difference in the final pizza.
How to make the best Pizza Capricciosa
The success of this pizza starts with the sauce. A simple, lightly seasoned tomato sauce made from canned San Marzano or fresh tomatoes, a touch of olive oil, garlic, and salt yields the best flavor.
