After my first collection of speedy recipes, this book focuses on one problem many of us face at dinnertime: too many pans and too little time. The idea is simple — complete, comforting dinners cooked using just one cooking dish to bring calm back to your evenings.

What “One Pot” means in this book
I wanted the term “one pot” to mean a complete meal. For that reason I followed a few simple rules while creating recipes:
- Each dinner is a complete meal cooked in a single dish.
- Whenever possible, protein, carbohydrates and vegetables are cooked together in the same pan.
- If the main dish doesn’t include carbs or veg, it’s paired with a quick no-cook side such as a salad, bread or ready-to-heat rice.
There are examples where vegetables don’t suit the main cooking method — for instance, some slow cooker recipes — so I’ve provided quick, no-cook sides in those cases. Each weekly meal plan includes two main meals paired with no-cook side options to keep the cooking minimal.

How many recipes are in the book?
There are 100 new recipes in total: 60 mains, 20 sides, 10 weekend breakfasts and 10 sweet treats.
Can I get a signed copy?
Yes — a limited number of signed copies are available from Waterstones. They make a nice gift or a special treat if you’d like a signed edition.
Do I need a slow cooker?
No. Every slow cooker recipe includes an alternative cooking method, with one exception: the slow cooker version of the One Pan Lasagne (a separate version appears in my first book).
Does the book include meal plans?
Yes — there are ten weeks of meal plans with no repeated recipes. Each week contains six dinners, one weekend breakfast and one weekend treat. Most dinners include a suggested side so meals are balanced with carbs and vegetables.
Do the meal plans include shopping lists?
They do. Each weekly plan comes with a full shopping list so you can grab everything in one trip or place an online shop with ease.

Recipe testing: Every recipe in the book was tested multiple times — at least five each — and then prepared again for photography. Some dishes required many rounds of tweaks to reach the final version. Between the team and contributors, hundreds of trial dishes were cooked to ensure these recipes work reliably for home cooks.
Who ate the test food?
Often friends or neighbours, sometimes the team for dinner, or it went into the freezer for another day. If something truly failed, Archie the dog usually stepped in. When we were in intense testing phases, it wasn’t unusual to hand out parcels of food to anyone nearby.
