Cook for a total of about four minutes, removing the dome occasionally to toss the tortellini and add a bit more water as needed so they heat evenly and don’t dry out.

Once the tortellini is warmed through, set the dome aside and add a little cooking oil to the griddle. Add the bite-sized steak pieces, season with kosher salt and pepper, and cook while mixing with the tortellini for about two minutes so the flavors begin to combine.

Next, add the lobster meat, season lightly again, and cook for another minute while combining it with the pasta and steak. Then stir in the pesto and pour the heavy cream over the mixture, using spatulas to keep the cream pooled so it can thicken into a silky sauce.

Continue to mix for another minute or two until the cream reduces slightly and coats the tortellini, steak, and lobster. Finish by sprinkling shredded mozzarella over the top and covering briefly with the melting dome or lid until the cheese melts into a gooey topping.
