As a true food lover, Thanksgiving ranks among my favorite holidays. I grew up in a family of excellent cooks, and when everyone gathers, the meal becomes the highlight of the year. The familiar mix of stuffing, roasted turkey flavors, creamy gravy, mashed potatoes and sweet potatoes is irresistible.
Recently I wanted all those comforting Thanksgiving flavors without the full holiday effort. I started experimenting in the kitchen and developed this simple, flavorful one-dish Thanksgiving Bake. It captures the season’s best tastes—savory chicken in a creamy sauce, topped with a cider-splashed stuffing and sweet-tart craisins. If you enjoy classic holiday flavors but want an easier weekday or small gathering meal, this dish is perfect.
For this version I used sparkling apple cider from Kristian Regale as the liquid that moistens the stuffing; it brings a bright, slightly effervescent apple note that contrasts nicely with the savory sauce and dried cranberries. I also enjoyed a glass of the same cider with dinner—the flavor is a natural match for this recipe.

- 5 boneless, skinless chicken breasts
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 tsp onion powder
- 1 tsp garlic salt
- 1 box stuffing mix (prepared dry mix)
- 3/4 cup sparkling apple cider (I used Kristian Regale)
- 1/4 cup water
- 3/4 cup craisins (dried cranberries)
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and arrange the chicken breasts in a single layer.
- In a large saucepan, melt the butter over medium heat. Stir in the flour and cook, stirring constantly, for about one minute to form a roux. Gradually whisk in the milk a little at a time, keeping the mixture smooth. Continue stirring until the sauce thickens. Stir in the onion powder and garlic salt, then remove from heat.
- Pour the prepared sauce evenly over the chicken breasts in the baking dish.
- In a medium bowl, combine the dry stuffing mix and craisins. Add the sparkling apple cider and water, stirring until the stuffing is moistened and coated. Spread the stuffing mixture evenly over the sauced chicken.
- Bake uncovered for 30–40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the stuffing is golden on top. Let rest a few minutes before serving.
Serving suggestions: This Thanksgiving Bake pairs well with simple sides that complement its flavors without competing—creamy mashed potatoes, roasted green beans, or a crisp autumn salad are all excellent choices. A warm roll or biscuit helps soak up the sauce.
Make-ahead and storage: You can assemble the dish a few hours before baking—cover and refrigerate, then bake when ready. Leftovers keep well in an airtight container in the refrigerator for 3–4 days and reheating in the oven at 350°F (175°C) preserves texture better than the microwave.
Variations and substitutions: Swap the chicken for turkey cutlets to make the dish even more traditionally Thanksgiving-themed. If you prefer a lighter sauce, substitute half-and-half or an unsweetened almond milk blend and reduce butter by a tablespoon. For a nutty crunch, stir in chopped pecans or walnuts to the stuffing mixture before baking. If you don’t have sparkling cider, substitute regular apple juice or a mixture of apple juice and a splash of club soda to add brightness.
Tips for success: Pat the chicken dry before placing it in the dish so the sauce adheres better. When making the roux, keep the heat moderate to prevent browning—you’re aiming for a smooth, pale sauce. If the stuffing seems too dry after mixing, add a bit more cider or water; if it’s too wet, a spoonful more dry stuffing mix will help balance it.
This simple Thanksgiving Bake captures the cozy flavors of the holiday in an easy, weeknight-friendly format. Whether you’re cooking for a small gathering or want the taste of Thanksgiving any time of year, this recipe is a delicious, comforting choice. Enjoy!
