  • 10 TBSP salted butter, divided
  • 1/8 tsp allspice
  • 1/8 tsp ground cloves
  • 1 tsp cinnamon
  • 2 TBSP light brown sugar
  • 1/2 C + 2 TBSP (130 g) granulated sugar
  • 1/2 tsp salt
  • 1 1/3 C (150 g) all-purpose flour
  • 1 tsp baking powder
  • 2 large eggs, at room temperature
  • 1 tsp pure vanilla extract

For the Caramel Cream Cheese Layer

  • 8 oz (1 block) full-fat cream cheese, at room temperature
  • 1 large egg, at room temperature
  • 3 C (350 g) powdered sugar, plus extra for dusting
  • 1/3 C salted caramel sauce (homemade or store-bought), pourable consistency

Instructions

  1. Core and slice apples to about 1/8″ thickness. You should have about 1 lb of sliced apples. Toss with 2 TBSP sugar and the juice of 1/2 a lemon, cover, and refrigerate for 1 hour. After an hour, drain off excess liquid.
  2. Preheat the oven to 350°F. Line a 9″ springform pan with parchment and spray with nonstick spray.
  3. In a large skillet, melt 2 TBSP of butter. Add brown sugar, allspice, ground cloves, and cinnamon; whisk until the sugar dissolves.
  4. Add the apples and cook 8–10 minutes, until tender. Remove from heat and let cool for 10 minutes.
  5. Melt the remaining 8 TBSP of butter and combine in a large bowl with the granulated sugar. Whisk to combine.
  6. Add the eggs and vanilla; whisk until the eggs are fully incorporated.
  7. Fold in the flour, baking powder, and salt until just combined, with a few streaks of flour remaining.
  8. Fold in the slightly cooled apples until no flour streaks remain.
  9. Pour the cake batter into the prepared pan and spread into an even layer.
  10. In a medium bowl, beat the cream cheese with a hand mixer until smooth. Add the egg and mix to combine, scraping the bowl as needed.
