Dalgona Coffee Recipe: Whipped Coffee at Home

If you want to elevate your instant coffee, Dalgona coffee is a simple, dramatic way to do it. A few minutes of whipping transforms instant coffee, sugar, and hot water into a silky, frothy topping that sits beautifully on hot or cold milk. The result resembles a latte or cappuccino in texture and presentation, but it’s made with pantry staples and minimal equipment.

While you enjoy this frothy drink, a slice of banana nut bread or a soft and chewy chocolate chip cookie pairs beautifully, but the Dalgona itself is the star.

The classic Dalgona ratio is equal parts instant coffee, granulated sugar, and hot water. That ratio produces the best whipped texture. You can reduce or omit the sugar if you prefer a less sweet version; it will still whip, though sweetness and mouthfeel change. The coffee-to-water ratio should remain close to equal—try to keep differences to no more than about 1 teaspoon to avoid thinning the foam.

For the milk layer, a good starting ratio is one part whipped coffee to two parts milk, but adjust to your taste. Use more milk for a milder drink or more coffee topping for a stronger, creamier experience.

How do I know when the whipped coffee is ready?

At first the mixture will be dark and fluid. As you whisk and fold air in, it becomes lighter in color and thicker in texture. The finished whipped coffee should be smooth, glossy, and thick enough to hold its shape—when you lift the whisk, the mixture should fall in a ribbon or mound rather than running off thinly. Depending on your whisking method, this can take 2–10 minutes. A balloon whisk makes the process faster; a vigorous hand whisk will usually need 3–5 minutes.

Do I have to use instant coffee?

Dalgona coffee works because instant coffee dissolves completely in water and traps air as you whip it. Regular ground coffee will not dissolve or whip into foam. Espresso powder, which is soluble, can sometimes work but is stronger than typical instant coffee, so reduce the amount if you try it. For consistent results, use a standard instant coffee.

Tools that help

I recommend a balloon whisk with thin wires—it incorporates air quickly and reduces arm fatigue. Small or heavy whisks require more effort. A handheld electric mixer speeds things up but is only really necessary if you’re making multiple servings at once.
