Ingredients

Snickerdoodle Cinnamon Chip Cookies

  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 2 teaspoons vanilla
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup cinnamon chips (plus extra for tops)
  • Cinnamon sugar for rolling

Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • 1/2 cup butter, room temperature
  • 1 cup powdered sugar (add more if needed)
  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, cream together the softened butter, brown sugar, and white sugar until light and fluffy, a couple of minutes.
  2. Beat in the egg and vanilla until combined.
  3. Mix in the flour, baking powder, and salt until just combined. The dough should be moist but slightly crumbly—do not overmix.
  4. Fold in the cinnamon chips gently.
  5. Scoop dough using a 1/4 cup cookie scoop (for large cookies). For smaller cookies, use a 1.5 or 2 tablespoon scoop.
  6. Roll each dough ball in cinnamon sugar, then place on a parchment-lined baking sheet about 2 inches apart.
  7. Preheat the oven to 375°F (190°C). Bake large cookies for 15 minutes; bake smaller cookies for 10–12 minutes. Do not overbake—cookies should remain soft and chewy.
  8. Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely before frosting.

Cream Cheese Frosting

  1. Sift the powdered sugar into a bowl. Add the softened cream cheese, butter, and vanilla.
  2. Using a mixer, beat until the frosting is completely smooth and fluffy. Add more powdered sugar if the frosting is too thin.

Instructions

  2. For flatter, less puffy cookies, gently press each dough ball to slightly flatten before baking.
