I have a confession: I don’t think I’d ever made classic Rice Krispie treats until recently. I enjoy their crispy, marshmallowy texture when I eat one, but growing up my house favored other cereals and I never developed a habit of making them. That changed when I discovered a twist that elevates the simple treat into something extraordinary: brown butter and Biscoff (Speculoos) spread. The humble Rice Krispie bar becomes nutty, rich, and irresistibly fragrant when you brown the butter and fold in cookie butter.

Browned butter—also called beurre noisette—adds depth and a toasty aroma that complements the sweet marshmallow base. The technique is simple but requires attention: whisk the butter over medium-low heat until it foams, then watch as the color shifts from golden to a toasty brown and a nutty scent emerges. A stainless steel pan helps you see the color change and prevents accidentally burning the butter.

Biscoff spread, sometimes labeled Speculoos cookie butter, is the other key ingredient. It blends smoothly into the warm marshmallows with just a few seconds in the microwave, creating a spiced, caramel-like layer throughout the treat. You can swirl the spread into the marshmallow mixture or sandwich a thin layer of it between two presses of the cereal mixture for a more pronounced ribbon of cookie butter flavor. Both approaches are delicious; I chose to fully incorporate the Biscoff into the marshmallow so every bite is evenly flavored.

The method is straightforward and quick, making these bars an excellent last-minute dessert or snack. Butter an 8 x 8-inch pan first so it’s ready when the cereal mixture comes together. After browning the butter and melting in the marshmallows, stir in the warmed Biscoff, then add a pinch of sea salt and six cups of puffed rice cereal. Press the mixture into the prepared pan—placing a piece of wax paper over the top and using a glass to smooth it helps get a clean, even surface—but pressing by hand gives a more rustic shape that’s equally enjoyable.

If you like, drizzle melted chocolate over the cooled bars for a finishing touch. It’s optional, as the bars are already deeply satisfying on their own, but the chocolate adds a glossy, decadent accent. Cut into 12 rectangular bars or 16 squares, whichever suits your serving needs. Ingredients

  • 1 stick unsalted butter
  • 10 oz. bag mini marshmallows
  • 1/2 cup Biscoff Spread or Speculoos Cookie Butter
  • 6 cups Rice Crispies cereal
  • 1/4 teaspoon sea salt
  • Melted chocolate, optional

Instructions

  1. Butter an 8 x 8-inch pan and set it aside.
  2. Melt the butter in a medium to large stainless steel pot over medium-low heat, whisking often. The butter will foam and then darken; watch closely so it browns without burning. Remove from heat once it reaches a deep golden-brown and smells nutty.
  3. Reduce heat to low and add the marshmallows, stirring until completely melted and smooth.
  4. Warm the Biscoff Spread for about 15–25 seconds in the microwave so it loosens, then stir it into the melted marshmallow until fully combined.
  5. Stir in the sea salt and the Rice Crispies cereal until evenly coated. Press the mixture into the prepared pan. For a smooth surface, place wax paper over the top and use a glass to gently roll and flatten; alternatively, press with greased hands for a more rustic finish.
  6. Allow the pan to cool for a few minutes, then cut into 16 squares or 12 rectangular bars. Drizzle with melted chocolate if desired before serving.
