Deviled Eggs with Bacon
Ingredients
- 8 oz bacon, diced
- 12 large boiled eggs
- 3 tablespoons prepared yellow mustard
- 2 tablespoons pickle relish
- 2 tablespoons grated onion
- 2 tablespoons mayonnaise
- 1 teaspoon paprika
- A few dashes of hot sauce
- Salt and pepper, to taste
- Chopped chives for garnish
Instructions
- Dice the bacon and cook in a medium skillet over medium-high heat until crisp. Drain on paper towels and let cool.
- Peel the eggs and slice in half lengthwise. Carefully remove the yolks and place them in a medium bowl. Arrange the egg whites, cut side up, on a serving platter.
- Use a fork to break up the yolks. Add mustard, relish, grated onion, mayonnaise, paprika, and hot sauce. Stir in most of the bacon, reserving some for garnish. Season with salt and pepper and taste to adjust.
- Transfer the filling to a piping bag fitted with a large tip or to a zip-top bag with a corner trimmed. Pipe or spoon the filling into the egg whites.
- Garnish with the reserved bacon and chopped chives. Serve immediately or refrigerate until ready to serve.
