Ingredients
The Salad
1 cup cherry tomatoes
1 English cucumber, chopped
1/2 red onion, thinly sliced
1 bell pepper (any color), sliced
1 can black olives, drained
1 cup (about 140 g) feta cheese, crumbled or cubed
1 head romaine lettuce, chopped
The Dressing
Zest and juice of 2 lemons
12 tablespoons light olive oil (or to taste)
2 teaspoons dried oregano
Salt and freshly ground black pepper, to taste
Instructions
To make the dressing
Combine lemon zest, lemon juice, olive oil, oregano, salt and pepper in a jar with a tight lid or in a small bowl. Shake or whisk until the dressing is emulsified and well blended. Taste and adjust seasoning if needed.
To make the salad
Prepare all the vegetables: halve the cherry tomatoes, chop the cucumber and romaine, slice the pepper and onions. Place the vegetables and olives in a large salad bowl.
Add the crumbled or cubed feta on top. Just before serving, drizzle the dressing over the salad and gently toss until evenly coated. Serve immediately with warm bread if desired.
Tips and variations: For extra crunch, add chopped cucumber seeds removed if preferred or include a few toasted pine nuts. Swap in fresh oregano or basil if available. To keep the feta texture intact, add it after tossing if you prefer larger chunks to remain visible on top.
