Here she offers a very quick crustless paleo quiche that uses just a handful of ingredients yet delivers a satisfying boost of protein and healthy fats from eggs, bacon and coconut milk. It’s ideal for busy mornings, a weekend brunch, or meal prepping.
When possible, choose high-quality ingredients: look for hormone-free bacon, free-range eggs, and organic or full-fat coconut milk. Using well-sourced ingredients improves flavor and overall results.
Serve slices warm or at room temperature. This quiche pairs nicely with a paleo-friendly bread or muffin, sautéed vegetables, or fresh fruit for a balanced meal.

Always use large eggs unless a recipe specifies otherwise; jumbo eggs can make baked goods overly wet. For best results, bring eggs to room temperature before mixing. The quiche reheats well the next day—try it with salsa or sliced avocado for extra flavor.

Some readers may prefer dairy-free options like dairy-free shredded products. Before using highly processed vegan cheese substitutes, check ingredient lists and decide what fits your personal approach. If you tolerate dairy, regular cheese is usually less processed and can lower the carb count compared to many dairy-free alternatives. Heavy cream or raw milk are lower in carbs than standard milk and can work well in this recipe if dairy is acceptable for you.
I made this quiche with shredded Cheddar and raw milk because I tolerate dairy. We purchase raw milk locally from a small School of Food and Agriculture that also keeps cattle. I often use raw milk to make cultured dairy products at home—some batches turn into viili, a thick Finnish cultured milk with a stretchy texture that is eaten with a spoon. Back to the quiche: it was very tasty and surprisingly satisfying—one of the best crustless quiches I’ve tried. Thank you, Tina!

Quick Crustless Paleo Quiche by Tina Turbin
Ingredients
- 1 whole package bacon (about 16 oz / 450 g)
- 1 large onion
- 6 large eggs, room temperature
- 1/2 cup (120 ml) coconut milk or raw, grass-fed milk
- 3/4 cup (180 ml) shredded Daiya cheese or regular Cheddar
Instructions
- Preheat the oven to 425 °F.
- Bake bacon on a rack in the oven or pan-fry until cooked.
- Let the bacon cool and drain off excess fat.
- Chop the bacon into small pieces.
- Slice the onion into thick rings.
- Brush the onion rings lightly with oil of your choice.
- Place onion rings on a rack in a Pyrex dish or roasting rack and bake about 15–20 minutes until they are soft and glossy.
- Some rings may crisp while others remain moist—this contrast works well in the quiche.
- Place the chopped bacon in a greased pie dish and arrange the whole onion rings on top.
- Whisk the eggs and milk together until well combined.
- Pour the egg mixture over the onions and bacon.
- Sprinkle the shredded cheese over the top and gently press it into the eggs a little. Use any cheese you prefer if you consume dairy.
- Bake for 20–25 minutes at 425 °F until the edges begin to set.
- Reduce the oven temperature to 325 °F and cover the dish loosely with foil.
- Return to the oven for about 15 more minutes, then uncover and bake an additional 5 minutes if needed.
- The quiche is done when the center feels slightly firm and springs back when touched.
- Allow to cool briefly before slicing and serving.
