These Vegan Strawberry Chocolate Chip Muffins are a healthy, approachable recipe that highlights fresh berries and mini chocolate chips while keeping the ingredients simple: whole grain flour, a natural liquid sweetener, and nondairy milk. They are moist, tender, and sweet without refined sugar.
This version became vegan out of convenience — I was short on eggs and decided to adapt the basic muffin framework to skip them. I also avoid dairy in many baked goods, so this was a natural switch. After a few test batches, the recipe settled into a reliably delicious muffin that my family loves. Ingredients
Dry ingredients
- 2 cups whole wheat pastry flour
- 1/2 cup flaxseed meal
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
Wet ingredients
- 3/4 cup non-dairy milk (unsweetened almond milk recommended) mixed with 1 tablespoon apple cider vinegar
- 1/2 cup coconut oil, melted (or another neutral oil)
- 3/4 cup agave nectar (or maple syrup/honey as a substitute)
- 1 tablespoon pure vanilla extract
Add-ins
- 1 cup fresh strawberry chunks
- 1/2 cup mini chocolate chips
Instructions
- Preheat the oven to 425°F (220°C). Lightly oil a muffin pan and dust with a little flour, or use paper liners and spray them with cooking spray.
- Combine the non-dairy milk and apple cider vinegar and let sit for a minute to slightly thicken (this creates a vegan “buttermilk”).
- In a large bowl, whisk together the whole wheat pastry flour, flaxseed meal, baking soda, baking powder, and salt until evenly mixed.
- In a separate bowl, whisk the milk mixture with the melted coconut oil, agave nectar, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.
- Gently fold in the strawberry chunks and mini chocolate chips.
- Fill muffin cups almost to the top. Immediately reduce oven temperature to 325°F (165°C) and bake for 15–20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the pan for a few minutes, then transfer to a wire rack to cool completely. Enjoy warm or at room temperature.
Notes
- Mini chocolate chips work best — larger chips can sink to the bottom of the muffin during baking.
- If you want visible strawberries and chips on top, reserve a few pieces and press them onto the batter after filling each cup.
