If you want a family-friendly, vegetable-packed dinner your kids won’t complain about, this Slow Cooker Healthy Taco Casserole is the recipe to try. It blends lean beef, hearty black beans and plenty of vegetables into a warming, flavorful casserole that’s simple to prepare and perfect for busy weeknights.
Getting picky eaters to accept greens can be a challenge. In my house, anything overtly green is met with hesitation. But when vegetables are mixed into a savory, taco-flavored casserole, they tend to disappear from plates faster than you can say “seconds.” This recipe hides collard greens, bell peppers and tomatoes in a saucy, cheesy base so the whole family enjoys a nutritious meal without fuss.
The casserole balances vegetables with protein: lean ground beef and black beans make it filling and well-rounded. You can top each serving with avocado, sour cream, extra shredded cheese or leave it plain—whatever your family prefers. The slow cooker makes the timing flexible; prepare the skillet steps in 20 minutes, then let the slow cooker finish the dish while you go about your day.
This casserole is an easy way to add vegetables to a familiar flavor profile. The collard greens wilt into the mix and absorb the tomato and beef flavors, while the corn tortillas give the finished dish a comforting, slightly textured base. It’s ideal for families who love tacos but want a lower-effort, make-ahead option for weeknights.
Slow Cooker Healthy Taco Casserole
Ingredients
- 1 pound 96/4 extra lean ground beef
- 1 small yellow onion, diced
- 1 red bell pepper, diced
- 1 yellow or orange bell pepper, diced
- 5 cups shredded collard greens
- 1 cup beef broth
- 1 pint grape or cherry tomatoes, halved
- 15 oz can black beans
- 18 oz tomato sauce with roasted garlic
- 3 tablespoons homemade taco seasoning
- 10 corn tortillas (extra thin preferred)
- 6 oz sharp cheddar cheese, shredded
Instructions
- Brown the ground beef in a skillet over medium-high heat until fully cooked. Drain any excess grease.
- Add the diced onion and bell peppers to the skillet and sauté for 2–3 minutes until they begin to soften.
- Stir in the shredded collard greens and mix well so the greens start to wilt into the beef and vegetables.
- Pour in the beef broth, cover the skillet, and simmer for about 5 minutes or until the greens are wilted and tender.
- Remove the cover and continue to simmer until the broth has mostly reduced.
- Take the skillet off the heat and stir in the halved tomatoes, black beans, tomato sauce and taco seasoning until evenly combined.
- Stack half of the corn tortillas, cut them into thin strips and then into bite-sized pieces. Stir the tortilla pieces into the beef and vegetable mixture so they absorb some of the sauce.
- Spray the slow cooker with non-stick spray, add the casserole mixture, and spread it evenly.
- Top the mixture with the shredded cheese.
- Cover and cook on high for 3–4 hours or on low for 6–8 hours, until the vegetables and beans are fully cooked and tender.
Notes
I cooked this on high in my 3.5-quart casserole slow cooker for 3 hours. Cooking times may vary by slow cooker model and capacity—check for tenderness and that the casserole is heated through before serving.

Serving Suggestions and Tips
Serve the casserole with sliced avocado, a dollop of sour cream or extra shredded cheese for those who want it richer. A squeeze of lime and a sprinkle of fresh cilantro brighten the dish if you like fresh flavors. Leftovers store well in the refrigerator for 3–4 days and can be reheated on the stovetop or in the microwave. For a vegetarian version, substitute crumbled firm tofu or extra beans for the beef and use vegetable broth in place of beef broth.
If you want a thicker casserole, reduce the amount of broth slightly or let the skillet mixture simmer a bit longer before transferring to the slow cooker to evaporate excess liquid. Use fresh tortillas for the best texture; they absorb sauce and add substance to every bite. Adjust taco seasoning to taste—start with less if you prefer a milder family-friendly flavor and add more for a bolder dish.
